<span style="font-family: Verdana, sans-serif;">- Preparam una vinagreta amb l'oli, la soja, el vinagre, el suc de llima, la mostassa, la ratlladura de llima i la de la gingebra.</span><br />
<span style="font-family: Verdana, sans-serif;">- Disposem la tonyina dins una galleda amb la vinagreta, tapam i deixam macerar dins el frigorífic el temps que considerem oportú en funció del gust a tonyina que desitgem.</span><br />
<span style="font-family: Verdana, sans-serif;">- Pelam els tomáquets, llevam les llavors i tallam en dauets.</span><br />
<span style="font-family: Verdana, sans-serif;">- Feim el mateix amb l'alvocat i el cogombre.</span><br />
<span style="font-family: Verdana, sans-serif;">- Mesclam amb la tonyina en maceració i servim amb un cercle d'emplatar o qualsevol altre presentació.</span><br />

<span style="font-family: Verdana, sans-serif;">- 100 gr. de sucre (segons com ho volguem de dolç)</span><br />

-<span style="font-family: Verdana, sans-serif;"> Posam la sucre dins la Thermomix i la trituram a velocitat 10 fins que sigui pols i la reservam.</span><br />
<span style="font-family: Verdana, sans-serif;">- Posam les xufes i les trituram a velocitat 5 pujant fins a deu uns trenta segons aprox.(es nota quan estan triturades amb el canvi de renou que fan dins la Thermomix).</span><br />
<span style="font-family: Verdana, sans-serif;">- Afegim la sucre i el litre d'aigua i mesclam a velocitat 5 fins a 10 durant un minut.</span><br />
<span style="font-family: Verdana, sans-serif;">- El pas mes dificil es el de colar l'orxata pero jo ho faig d'aquesta manera perque sigui més fàcil:</span><br />
<span style="font-family: Verdana, sans-serif;">*Colocam el colador xino dins una olla grossa on es recolzi be.</span><br />
<span style="font-family: Verdana, sans-serif;">*Dins hi colocam una tela molt fina que empram a Menorca per fer els formatges.</span><br />
<span style="font-family: Verdana, sans-serif;">*Anam posant la mescla de la Thermomix a dins i quan esta quasi colat hem d'exprimir la tela fins que dins nomes quedin les restes de les xufes fortes i solides.</span><br />
<span style="font-family: Verdana, sans-serif;">*Ho posam dins el congelador i es serveix ben freda (aguanta molta estona dins el congelador).</span><br />

- <span style="font-family: Verdana, sans-serif;">Posam en el got de la thermomix la gelatina neutra, l'aigua i la sucre i programem 5 min. a 100º vel 2.</span><br />
<span style="font-family: Verdana, sans-serif;">- Incorporem la gelatina de fruites i mesclam 10 seg. vel 4 i despres programam un altres 5 min. a 100º vel. 2.</span><br />
<span style="font-family: Verdana, sans-serif;">- Posem en un motlle que haurem untat d'oli de girasol. Jo l'he posat en un taper rectangular de 1 cm. de gruix aproximadament</span><br />
<span style="font-family: Verdana, sans-serif;">- Deixam refredar dins la nevera durant unes 8-12 hores</span><br />
<span style="font-family: Verdana, sans-serif;">- Desmotllam i tallam en quadradets.</span><br />
<span style="font-family: Verdana, sans-serif;">- Podem arrebossar-les amb sucre o sucre glas. Si a la sucre li afegim un poquet d'acid citric (posar poquet, mesclar i provar. Afegir segons el gust) obtindrem unes gominolas àcides molt interessants.</span><br />

<span style="font-family: Verdana, sans-serif;">També es poden elaborar en motlles individuals de formes diferents encara que crec que ha de ser mes dificil de treure-les d'una en una.</span><br />

- <span style="font-family: Verdana, sans-serif;">Posam la papallona a les cuxilles de la thermomix, posam els ous i la sucre dins el got de la thermomix i programam 6 minuts a 37ºC, velocitat 3. </span><br />
<span style="font-family: Verdana, sans-serif;">- Quan acabi el temps llevam la temperatura i programam 6 minuts velocitat 3, afegim la farina i mesclam 4 segons velocitat 1.</span><br />
<span style="font-family: Verdana, sans-serif;">- Acabam de mesclar amb ajuda de l'espàtula. </span><br />
<span style="font-family: Verdana, sans-serif;">- Amb una cullera agafam un poc de massa i la escampam, un poc ovalada, per damunt una palangrana (amb paper de forn).</span><br />
<span style="font-family: Verdana, sans-serif;">- Posam la palangrana dins el forn precalentat a 180ºC uns 5-8 minuts. Quan estiguin fets deixam refredar uns minuts i desferram amb la punta d'un ganivet.</span><br />

<span style="font-family: Verdana, sans-serif;">- Pelam la tomatiga llevam els pinyols, la tallam i acabam el sofregit amb l'all i la ceba.</span><br />
<span style="font-family: Verdana, sans-serif;">- Afegim un poc de vi ranci o un poc de brandy (opcional) i la carn al sofregit i deixam coure tot junt uns minuts.</span><br />
<span style="font-family: Verdana, sans-serif;">- Pelam les patates, les</span><span style="font-family: Verdana, sans-serif;"> tallam en lamines i les confitam en oli calent (fregir-les pero no del tot).</span><br />

- <span style="font-family: Verdana, sans-serif;">Posam la llet, l'oli, els ous, la sucre i la sal dins la thermomix i mesclam 2 minuts a 37º velocitat 3.</span><br />
<span style="font-family: Verdana, sans-serif;">- Hi afegim el llevat i mesclam uns segons.</span><br />
<span style="font-family: Verdana, sans-serif;">- Acabam posant la farina i mesclam 10 segons a velocidad 6 i 2 minuts velocitat espiga.</span><br />
<span style="font-family: Verdana, sans-serif;">- Tiram la massa damunt una bandeja de forn coberta amb paper sulfuritzat amb ajuda de l'espatula, ens s'untem les mans d'oli i s'exten la massa de forma regular perquè ocupi tota la bandeja. </span><br />
<span style="font-family: Verdana, sans-serif;">- Es deixa fermentar fins que quasi dobli el seu volum. </span><br />
<span style="font-family: Verdana, sans-serif;">- Es fan 16 trossos de sobrassada i s'incrusten dins la massa fermentada.</span><br />
<span style="font-family: Verdana, sans-serif;">- S'enforna dins el forn precalentat a 175º-180º durant 15 minuts aproximadament.</span><br />

<span style="font-family: Verdana, sans-serif;">- Després agafam una paella bastant gran i posem un poc d'oli. Afegim els alls , els pits i un poc de pell de llima, fregim i reservem dins un plat (millor si els fregim amb dues tongades) </span><br />
<span style="font-family: Verdana;">- Dins la mateixa paella fregim la pinya. Quan començi a agafar un poc de color posam les dues cullerades de mel i deixem fins que estigui totalment feta. Reservem.</span><br />
<span style="font-family: Verdana;">- Afegim un poc més d'oli i fregim els porros. Quan estiguin fregits posem el mango i deixem coure uns minuts.</span><br />
<span style="font-family: Verdana;">- Ara afegim la resta de pell de llima, el gengibre i un poc de festucs picats. Deixem coure un poc mes.</span><br />
<span style="font-family: Verdana;">- Hi posem la pinya, els pits, el suc de llima, el vi blanc, la salsa de peix, la salsa de soja, el perbre blanc i un poc de sal. Ha de coure tot junt uns cinc minuts. Si trobem que és un poc massa àcid hi afegim un poc més de mel.</span><br />
